Orange Dreamcicle Cake

Thanks to Chesann Thompson from Perry, GA for submitting this low calorie cake! I have tasted it and it is fantastic.

Cake:
1            Box yellow cake (Duncan Hines)
12          ounces diet orange soda
                 *You're substituting the eggs and oil in the cake mix instructions with the diet soda.

Mix the soda, water and cake mix with electric mixer. Pour cake mixture into 2 greased 9" cake pans. Cook as directed on box and then test with the center with a toothpick. Cooking times may vary. Cook cake until toothpick can be removed from the center of the cake without any mixture sticking to the toothpick.


Icing:
1           16oz block low-fat cream cheese
1           cup splenda
1/4        tsp lemon extract
1/4        cup orange juice (pulp free)


Mix all ingredients with a hand mixer. After cake has cooked and cooled, put a layer of icing between the two 9" cakes and on top. Chill and serve cold.
