Whole Grain Spaghetti with Tilapia

1 box whole grain spaghetti
1 clove garlic, minced
2 tablespoons extra-virgin olive oil
1/2 teaspoon salt and pepper, more or less to your liking
3-4 frozen Tilapia fillets
2 tablespoons lemon juice
2 cups fresh baby spinach leaves
1/2 teaspoon basil seasoning



Pre-heat oven to 400 degrees.

Bring large pot of salted water to a boil, add pasta and cook 8-10 mins. Transfer pasta to large bowl with tongs to keep some of the moisture from the water, on the pasta. Add the garlic, extra-virgin olive oil, salt and pepper, to the cooked pasta, then toss all together.
You can cook the Tilapia frozen or thawed, as directions on the bag. I left it frozen- sprinkled Tilapia on both sides with fresh lemon juice, Lawry's Seasoned Pepper and Cavender's Greek Seasoning. Cook frozen tilapia 12-15 minutes until flakes off (8-10 minutes if thawed).

Add basil to pasta, toss to mix. Place layer of baby spinach in each plate, top with some pasta, then top pasta with cooked Tilapia. Serve hot.
