Amazing Skinny Bread Substitute


This recipe was submitted by Aimee Thompson of Covington, GA. If you want a bread substitute, this recipe is great! You can make muffins or just use it like I did to make a sandwich. Gluten free and very healthy!

1/4 cup   flaxseed meal (ground or milled)
1 tsp       chia seed (optional)
1 tsp       baking powder
1 tsp       cinnamon (optional--use for sweet muffins)
1 tsp       coconut oil
1 tsp       coconut palm sugar (organic sugar or any sugar substitute)
1             egg


Mix all ingredients together in a microwave safe cup or dish. The mixture will take the shape of the container. Microwave on high for 55 seconds to 1 minute. Turn over container onto plate. Immediately wash the container.

  1. Is there any version of this to make a full loaf in an oven? I don't own a microwave. Looks like it could be made on a griddle and used for a wrap.

    1. I do not have a version for a full loaf, but I think the griddle is a great idea!
